Chole Chickpea Curry, otherwise known as Punjabi Chole Masala, is one of the most popular vegetarian curry dishes in India. It is a chickpea curry cooked with onions, tomatoes and lots of spices. Traditionally, it is enjoyed with bhatura (a deep fried bread) or with rice making it a very popular food combination
A can of chickpeas and tomatoes can be a low as 80c each from the supermarket.
If you have flatbread or rice in the pantry, this dish serves 4.
INGREDIENTS
- 1 onion, finely diced
- 1 tablespoon garlic paste
- 1 tablespoon ginger paste
- Drizzle of oil
- 1 teaspoon cumin, ground
- 1 teaspoon coriander, ground
- 1/2 teaspoon chilli powder
- 1 teaspoon garam masala
- 2 cans chickpeas
- 1 can tomatoes
- 1/4 cup yoghurt
- Flatbread and/or steamed rice (to serve)
METHOD
- Sauté onion, garlic, ginger with a drizzle of oil for 4–5 minutes.
- Add the spices, tomato and chickpeas and cook for 15.
- Season with salt and top with yoghurt.
- Serve with flatbread or rice on the side and something fresh, like lemon pickle or cherry tomatoes.
